Beef Teriyaki Skewers

Thin slices of beef sirloin is hand sliced, skewered and marinated in our secret teriyaki sauce overnight and grilled over coals. It is a perfect complement for a cold drink.

Chicken Teriyaki

Chicken quarters are trimmed, marinated in our secret teriyaki sauce and barbecued over mesquite charcoal. A version of this recipe has been the basis for many temples’ teriyaki, but we think that our version is the best!

Gyoza

Our Yokohama-styled Japanese pan-fried dumplings are made with ground pork, cabbage and onions wrapped in a thin flour dough. Then they are golden fried and steamed till tender.

Corn

Our sweet milk-boiled corn-on-the cob is freshly picked from a Japanese-American farmer in the Sacramento Valley.

Assorted Sushi

We have a Nigiri Sushi (tuna, salmon, shrimp) set, California Roll set and a Spicy Tuna Roll set.

Ramen

Ramen descends from Chinese noodle soups, but in Japan it evolved greatly. We offer tonkotsu (pork bone) broth with chashu, scallions, and fish cake or konbu (vegetarian) broth with scallions.

Inari Sushi

Seasoned sushi rice is stuffed into a flavored fried tofu (“age”). This sushi originated in Fushimi Inari-Taisha Shrine which is in the Fushimi district of Kyoto.

Chicken Salad

Our Chicken Salad is a mix of green and red cabbage, carrots, green onions, ramen noodles, sesame seeds and chicken tossed in a delicious dressing made from a secret recipe that’s been handed down from booth chairs over the years.

Tempura

For our tempura, shrimp and vegetables are lightly floured, put in a batter of flour, egg and cold water and then quickly fried so that the coating is still fluffy but the exterior crispy.

White Rice is available at the Chicken/Beef Teriyaki, Gyoza & Tempura booths.

Desserts

Imagawayaki

Imagawayaki is a common Japanese festival dessert made from waffle batter which is poured into a special pan and filled with sweet red bean (azuki) paste.

Strawberry Shortcake

Ripe strawberries are freshly cut, mixed in syrup and placed in a shortcake with a dollop of whipped cream. This dessert harkens to the Issei farmworkers who came to the Bay Area to work on strawberry fields.

Chichi Dango

Chichi Dango are rice dumplings. In Japan, they are most commonly served with a savory sweet shoyu based glaze. However,  this version which originate from Hawaii uses Jello to color and flavor.
